Why European flax

Linen is only as good as the flax it is spun from. The cool, damp coastline running from Normandy up through Belgium and the Netherlands produces most of the world's long-fibre flax, and it does it on rainfall alone.

Why linen keeps bread better

Plastic traps the moisture coming off a loaf and pushes it straight back into the crust, which is why bagged bread turns soft and leathery. Linen works the other way. The weave is open enough to let steam out, but close enough to hold back the dry air that stales the crumb.

How to use it
  1. Let the loaf cool completely. Bagging warm bread traps steam and defeats the point.
  2. Slide it in and draw the string closed.
  3. Keep it at room temperature and out of direct sun.
  4. Turn it out and shake the crumbs between loaves.
Care
  • Machine wash warm on a gentle cycle
  • Wash it on its own the first time, since new linen sheds a little lint
  • Line dry, or tumble on low and take it out slightly damp
  • Skip the fabric softener. It coats the fibres and cuts the breathability that makes the bag work
