Why Dough Sticks to Everything

Some doughs behave. Others weld themselves to the bowl, the bench, the scraper and you. It is not random, and it is not you being bad at baking. Three things decide how badly dough sticks, and once you know them you can predict it.

1. Hydration

Hydration is the weight of water as a percentage of the flour. A 65 percent dough is firm and manageable. An 80 percent ciabatta or high-hydration sourdough is slack and genuinely sticky, because there is more free water at the surface to act as glue.

If your dough is suddenly stickier than usual, hydration is the first thing to check. This is also why the same recipe behaves differently in humid weather.

2. Gluten development

Early in mixing, the gluten network is disorganised and the dough is at its stickiest. As you develop it, through kneading or stretch and folds or just time, the network organises and the dough starts holding itself together instead of grabbing everything else.

This is why an underworked dough feels like glue and a well-developed one feels smooth. Rest is often the fix. Give a sticky dough twenty minutes and it will handle better with no extra flour.

3. The surface

Dough grips onto texture. A scratched plastic tub, a worn wooden bench or a chipped bowl gives it hundreds of tiny anchor points. A smooth stainless bowl gives it far fewer.

This is the argument for not scrubbing your bowls with metal scourers. Every scratch you add makes the next bake stick harder, which makes you scrub harder. It compounds.

Working with sticky dough instead of fighting it

  • Wet your hands, not the dough. A damp hand releases from wet dough. A floured hand works for firmer dough. Match the tool to the hydration.
  • Use a bench scraper as an extension of your hand. It goes where fingers stick.
  • Rest before you fight. Twenty minutes of bench rest beats another handful of flour, which changes the recipe.
  • Rice flour for dusting. No gluten, so it cannot form a sticky network against the dough.

And when it has already dried on
